I admit to being something of a traditionalist in that regard - sweet. =:9 I was introduced to pancakes with orange and sugar, but later on was shown the real version thereof: Grand Marnier. ^_^ And ideally, whipped cream. Oh, a sensual match indeed..
Mind, there's also much to commend the humble Belgian waffle: straight out of the seller's iron, into your paw. Fluffily light, beautifully sweet, it requires no accompaniment. ^_^
It might be quite fun to contemplate a variety of cheese-based pancakes, with different varieties (or even blends) - I wonder how a good Jarlsberg might fare? Even a real mozzarella, with actual flavor, could be fun. =:9
